My daughter had some friends sleep over last night and wanted something delicious for breakfast. She told her friends about our Picky Eater Challenge, and they responded with, "I feel so bad for you." Kids are funny. Reality had set in, and she was already feeling that peer pressure. What's her idea of delicious? I guess Cinnamon Toast Crunch or pancakes covered in butter and powdered sugar. I agree with her 110%. So, to change our family's eating habits, I made Coconut Flour Oven Pancakes.
Have you had a Hootenanny before? It's kind of like that. Very simple ingredients. I've made this before with flour, and my kids were unimpressed. Even when it was covered in sugar, syrup, and butter. While searching for a recipe, I came across this one from Bob's Red Mill, German Oven Pancakes. I made a few changes, and it was superb! I allowed them to top it with Homemade Blackberry Jam or Almond Butter.
How to Make Coconut Flour Oven Pancakes:
1 stick Butter
Eight eggs
1 Cup Coconut Milk (or milk)
1 Cup Coconut Flour
2tsp Vanilla
1tsp Cinnamon
1tsp Sea Salt
How to prepare:
Preheat oven to 400 degrees. In a baking dish or cast iron pan, place a stick of butter inside, and place it in the oven to melt.
Mix Coconut Milk, Coconut Flour, vanilla, cinnamon, and sea salt in a bowl. The batter will be thick.
Add mixture to the pan and spread evenly.
Bake for 20-30 minutes.
Serve with Homemade Jam, Almond Butter, or anything else yummy!
